Requirements to sell Raw Milk under the Standard Inspection

• Testing requirements
  • Mandatory Batch Testing: Every batch of raw milk or product must be tested by the producer at a third party lab  for bacterial/coliform counts before sale. Results must be sent to the department.
  • For more information on testing and prohibited counts, see 4-3-603.
• Labeling
  • Must use specific colored labels and mandatory safety warnings.
• Standards
  • Must meet Grade A production rules and strict pathogen standards (Section 4-3-603).

Fees for the Raw Milk Standard Inspection

• Annual Inspection Fee: $110
• Inspection Fee: Subject to a department inspection upon opening and annual inspections thereafter. (Inspection fee of $55 an hour for all investigation inspections.)

Registration

• To apply for a raw milk inspection, submit a completed application form to [email protected], provide evidence of compliance with facility and equipment standards, pay the required inspection fee, and schedule an initial inspection with a UDAF dairy inspector. Once an application has been submitted, a UDAF inspector will be in contact within 5 business days.

Requirements to sell Raw Milk under the Direct Farm Sales Exemption

• Testing
  • Monthly coliform testing by the producer (records must be kept for 6 months).
  • For more information on testing and prohibited counts, see 4-3-603.
• Labeling
  • Must include the specific statement: "This raw milk or raw milk product has not been licensed or inspected by the state of Utah..."

Fees to Operate Under the Direct Farm Sales Exemption

• No annual fee or inspection
• Inspection fee of $55 an hour for all investigation inspections; remains subject to Section 4-3-606 regarding foodborne illness investigations

• Producers operating under this exemption must notify the department. Email [email protected] with the producer’s name and address.
